This popular Japanese Taro dish reminds of hometown. Potatoes can also be used as a substitute for taros. But since potatoes lose their shape easily, additional care is required when simmering.

400g Japanese taros

1 cup dashi
1 1/2 tbsp — sake
1 1/2 tbsp — mirin (sweet cooking sake)
3 tbsp — sugar
Yellow-colored yuzu rind

<<How To>>

  1. Wash taros thoroughly, cut both ends off, and peel.
  2. Place the taros, dashi, sake, mirin and sugar in a pot, cover with a drop lid, and heat over medium heat. Cook for 10 minutes, and add soy sauce, and simmer it down.
  3. When the taros in the pot become tender, shake the pot to tumble the taros, coating them with glaze.
  4. Arrange the taros in a bowl, and place the shredded yuzu rind on top of it.

  • Choose smaller taros of an equal size. These types of taros will be more likely to retain their shape while simmering.
